Spaghetti SquashIf you are looking for a Low Carb dinner idea this one is super easy to make.

It is Gluten Free, Soy Free and we used Manchego Cheese to avoid milk dairy.   Manchego is a cheese made in the La Mancha region of Spain from the milk of sheep of the manchego breed.   Our family had no dairy side effects with this cheese.  It tastes just like Parmesan cheese without the dairy side effects.

Almost everything for this dinner can be found at Costco.  Bonus!!!

What you will need:

1 medium spaghetti squash (Trader Joe’s)

1 half package Grilled Mediterranean Style Chicken Skewers (Costco)

1 jar Mama’s Recipe Spaghetti Sauce (Costco)

1 cup Shredded Manchego Cheese (Costco)

21 Seasoning Salute (Trader Joe’s)

Avocado Oil (Costco)

Crushed Red Peppers (Trader Joe’s)

Spaghetti Squash Costco Items

Preheat oven to 350°. Cut the squash in half lengthwise, scoop out the seeds and fibers with a spoon. Place on a baking sheet lined with a Silicone Cooking Sheet, cut side up and sprinkle with 21 Seasoning Salute and Avocado Oil. Turn Spaghetti Squash over.

Roast about an hour or until the squash is soft to the touch.

Remove the spaghetti squash from the oven carefully fluff the spaghetti-like strands on each half with a fork, leaving the squash in the shell.

Fill each boat with 1 1/2 Chicken Skewers, 1 Cup of Mama’s Recipe Spaghetti Sauce and about 1/2 cup shredded Manchego Cheese.

Place the boats back into the hot oven and cook until the cheese is melted and the sauce is hot about 12 minutes. Garnish with crushed red peppers.
